During hatch creation you can call Settings window with full set of hatch properties by entering S (Settings) option when AutoCAD asks to pick points or select area to hatch.
After you created hatch, you can adjust all settings in Properties palette 9hatch should be selected)
And, of course, you can change basic settings in Hatch Visor.

About Leader:
If you are using Multileader, you can adjust settings of current Multileader style (just like for Dimensions or Text style) - menu Format -> Multileader Style.
For existing Multileaders you can adjust their settings in Properties palette (MLD should be selected).
