So this is what I mean by plot over rides https://knowledge.autodesk.com/support/autocad-architecture/learn-explore/caas/CloudHelp/cloudhelp/2....
I have changed all the colours to black bar the layers which I want to remain in colour. Most layers have objects of multiple colours within them. For example the site plan I realised I was having trouble doing this with is the Wayfinding plan. Each of our wayfinding signs are colour coded and labelled which is reflected in the drawing. I want everything except the layer containing these to print in black and white so they will stand out and be clearly visible when I send it over to our production and design teams. I know on PC it is possible to build a ctb by choosing layers but on mac it seems to only allow me to do it by colours which is not helpful to me as I have colours being used in multiple layers.
I found this thread about it already so this seems like yet another incredibly simple and useful requirement that macs can't do that pcs can https://forums.autodesk.com/t5/autocad-for-mac-forum/autocad-2013-for-mac-setting-plot-styles/td-p/3...
