Hi Tilly,
After adding (or even after changing) attribute definition in Block editor you need to sync changes with BATTMAN command:
http://help.autodesk.com/view/ACDMAC/2018/ENU/index.html?guid=GUID-4920952B-6809-49E7-956E-C6A94BEA6...
After you pick "Synchronize block" button and confirm changes, the new attribute will appear in all block insertions.
