I'm a Mac-using architect, we've had this issue a very long time with Autocad-generated PDF files coming from consultants. The workarounds you list are not solutions, just workarounds. I'd like to know if somebody has found a solution to the issue. We are currently on OSX 10.11 ElCapitan, but if the issue is solved in a later OSX edition I'd happily upgrade.
Please note:
If you use the Finder's Quicklook feature, the files render correctly like in Adobe Reader (but they cannot be printed that way). So this is a Mac Preview-specific problem. Since there are a lot of other advantages in using Preview instead of Reader, we'd like this to work. It isn't practical to expect the consultants to give up the searchable text feature.

Searchable text feature was introduced in AutoCAD 2016 for Windows and than in AutoCAD 2017 for Mac.
There are two workarounds:
- view PDF files on Mac with Adobe Reader - than you will not see "double" text
- turn off searchable text feature by setting AutoCAD System variable EPDFSHX=0. Than searchable text will not be created in PDF and text, ctreated with SXH based Text Style will look correctly.
