Create multiple machining planes
I do a lot of 3D modeling on a cnc router table 4' x 8'. In order to machine a 3D part such as a chess piece I either machine the piece on 2 sides or 4 sides by flipping it once or 4 times which is equivalent to 180 degrees or 90 degrees respectively. I am wondering if there is a way to create a stock with more than 4 sides or is there a way to change the machining plane by 45 degree increments or x number of degrees? This would help with undercuts.

You can either create a model of your stock much like you model a piece. If it has 6 or 8 or 12 sides. Have that as its own file, then insert it into your piece design model file and use that as a stock selection under setup. You can also use the [Construct] menu to construct plane at an angle. Or you can do a combination of both. This will give you the selections needed for setting tool orientation under an operation setup.

I was able to create multiple construction planes although difficult at times to get the correct orientation especially if the object has curved linear surfaces. Also I created an hexagon and attached it to the end of the part and used each side as a manufacturing plane. That worked well also. I did have to create a separate set up for each face to machine so I will have to see if I can combine these operations into one gcode. I don't think fusion 360 will write an Ax code to rotate the part but I could always add that in myself if it will generate the complete code.
I'll have to work at creating construction planes a bit as there is a lot to it.
Any further insights are appreciated.

You did not mention that you had A axis in your original post. When you create a setup, you will set your initial orientation. Any subsequent operations on other sides will use [Tool Orientation] selection where you pick your face or construction plane to create the rotation for the A axis.
