Use a Decision Point activity to direct a certain percentage of the patients to an activity that has the patients immediately walk out of an exit upon arriving into the model. I would also set a label (e.g. "noshow") to 1 on patients who exit so that you can filter the datasets in your dashboard widgets to only display information for patients who have a noshow label = 0.
