After upgrade, all of the computers in our classroom now show a black screen in schematic and PCB windows!

That is impossible to fix here. Ask whoever did the upgrade to fix it. Perhaps revert the update and go back to how it was before. The general rule is if it ain't broke don't fix it! I've been fixing PCs for over 40 years and updates are one of the most common things to cause a computer to fall over. I'm still running Windows 7 SP1 with NO updates, two-way firewall, lots of other stuff disabled in the registry and everything works perfect. This is why computer manufacturers love Windows because it breaks computers and people have to go out and buy a new one 😉

Was that a dreaded Windows update, or were you upgrading a very old Eagle install?

It's probably down to one of the usual culprits - an incompatible DLL that needs replacing - but I don't do Windows so can't help on details.
