I have a screenshot of the pre-supplied templates but I don't know what the differences are. Could someone explain what the main differences are?

The NCS templates. . .Imperial and Metric both use CTB files to determine lineweights and color. The only difference between those two are metric units vs. American decimal units.
The acad.dwt and the acad3D.dwt are setup to run AutoCAD only (no styles).
All the "named plot styles" templates are designed to use STB plotting. Rather than controlling a lines weight or color with the CTB file it is controlled at the layer level by assigning the layer a style that is setup in your STB file.
Anything that states "tutorial" is designed to work with the Civil 3D tutorial drawings.

I have no idea why you would want to use STB or CTB. To control styles. Is this for corporate standardization?
Well, whether we like it or not, layers are within styles. STB and CTB files determine how those layers are plotted.
STB or CTB depends on your standards. There are pros and cons to both. Most often STB, the lineweights are controlled by the layers themselves, so color of the layer doesnt matter, vs CTB where the lineweights are specified within the pen table that is used, and based on the color of the layer.
The first two in the list are the Civil 3d ones, they contain C3D styles and the layers based on the National Cad Standards that pertain to those civil styles
ACAD are no Civil 3d styles imperial - basically what comes with Vanilla AutoCAD
ACADISO are no Civil 3d styles metric - basically what comes with Vanilla AutoCAD
and I agree on the tutorial templates, they would not be something you would use in production.
