The beginning of the project starts after alignment begins, how do I change the station label at this point to 0+00, without removing the previous alignments entities.

Image shows that I want to change the station label at this location to 0+00, though it is in the middle of my alignment.

You can adjust where 0+00 is through Alignment Properties, under the Station Control tab.

Depending on weather you want to have the station labels all be positive if the project was to be extended at a later date, a station equation can also handle this while providing stations along the entire alignment. You would just need to create a AHEAD and BACK STATION EQUATION and add it to the label set. This would be accomplished in the lower portion of the dialogue that @tr.armour86 displayed.
