If this is the shading that results from the "Slopes" on the Analysis tab of a Surface (a min and max)...That's how mine turn out as well. I don't know of any way to smooth that out since it's relying on triangles. Sometimes I'll end up drawing a smooth polyline around it to make it look more realistic.
