So in my file management efforts, I chose to move the xml file to a new subfolder. My surface now shows the camera icon on the definition. How can I re-path or tell the surface where I moved the xml file to?

If you open Surface Properties->Definition, in the window below, you see the Operation Types that have been used to create that surface. on the Right, you see the Parameters, links for point files, xml's. There is a Browse folder icon at the end of the line, use that to change file path.
After that, Snapshot will be out of date, you might need to rebuild that too if you need that. That can be done in Toolspace->Surfaces->Expand the surface and right click on Definition->Rebuild Snapshot.
