From the Start Screen can Recent Documents be selectively removed?

Nope. Either REGEDIT or my RecentDocumentsManager when Acad is closed are the only 2 methods I'm aware of to edit this list.

That's what I thought - can files be selected with your Documents Manager as I've only really used it for DST's in the past?

Yes, it can remove any of the entries listed in the recent documents list. You don't even need to select a profile if removing just dwg or dwt entries, as those are not saved with the profile.
