The profile view in the dwg you posted is set to 1:1 (no vertical exaggeration - VE). If you right click on the profile view and select edit profile view style it is on the Graph tab that you set the VE.

When you create View Frames (Output tab, Create View Frames ) in the last (5th) dialog of the "wizard" you specify the profile view style. Make sure it is set to one that is 1:1 or whatever you want. Then when you Create Sheets (Output ribbon tab) it will remember the setting for profile view style.

You can change or edit the style of profile views created with Create Sheets but it will mess up your sheet's paper space view. IMO you're better off deleting the view frames, re-setting the sheet number counters and starting over. Getting the view frames right is important.
