Hi. I would like to create a Pipe Label for example that shows the MATERIAL in lets-say 5mm text and whatever is in the DESCRIPTION below it in lets say 3.5mm Text. Is this possible, possibly with an expression? Material will come directly from the pipe, the description will be something like "7.5m to boundary" or similar like the below.

Sure, make the Material as one text component at 5mm and the Description as a separate text component at 3.5mm.  Anchor the Description one to the Material one.  This works fine as long as you don't need to move the label into a drag state.

To have it in a drag state you'll need to get a little tricky with it.  Have the Material and Description as one text component.  Copy the contents to the clipboard, exit the label editor, paste it into an Mtext, edit the text heights, copy the contents and paste it back into the text component editor of the label style. The text formatting from the Mtext will be pasted into the label editor and will override the text height specified in the drag state setting.
