This was probably answered long ago so please point me in the direction if so. What is the fastest/ best way to fix errors in triangulation? I would edit the surface but I am not confident I know what I am doing.

Incorrect Triangulation
There are myriad reasons and as many fixes.
I'll assume the surface you show if made from 3 feature lines.
1. bad data in feature line can be analyzed and fixed in the elevation editor
2. no uniform triangles: when adding FL to surface as breaklines I like to set a supplementing number proportional to the data. 25 feet works for me
3. holes in the surface: something is preventing triangle getting to the fl. check the build options for restricting angle, elevation, length?

Not trying to be funny but... If you have enough knowledge to tell the Triangulation is wrong. I'd think you have the basic knowledge to edit the Surface. You may need practice in the methods used in the software.
Secondly the only way to "fix" the errors is to edit the Surface. Whether it's editing the Surface directly or editing the objects the Surface is created from. It's the same thing.
@Joe-Bouza has given you some good starting points. If you could post the drawing along with what version of Civil 3D you're using. That would go a long way in helping diagnose the issues.
