Grip Editing Pressure Pipe Fittings Changes Elevation to 0

What do you all think is the best method to update your pressure pipe network when the alignment has changed? I am using 2021, but have noticed the path based networks are keen to converting to part based, so I am primarily using part based. 

 

When needing to make changes to the alignment, using the fitting move grip in plan view to snap to the revised alignment changes the elevation of the fitting and/or attached pipes to 0. I have tried setting me osnapz to 1 and 0, but receive the same results. There are also some instances where slide would be perfect... If I could "snap" the middle of the fitting to the alignment (where the move node is located).

 

I am looking for an advice and tips on how people adjust. It's very annoying to have the profiles relatively done with a change to the plan wrecking havoc on them.
