you can do this easily with your existing line work and >>>Create Feature line from Object.
start with the boundary of your slab and assign the top of slab elevation
then convert your rays going from the slab to the low points.
what you do not distinguish are the high points... These again and be computed using feature line to the location from the low point and setting the grade.
as you go aroung the floor you may find the need to add more detail.
either way: in the tool space prospector right click the surface collection an create a surface (name it or accept the default "surface1"... FG_Slab seem appropriate to me.
This creates an empty surface if you expand it there are choices of data>>> select all your feature lines>>> right click >>> add to surface as break lines.
Now you can Identify elevations anywhere on the slab.
This is one technique. There are myriad ways to accomplish this. IMHO this method is a good entry level method
