IS THERE A WAY TO MODIFY PROFILE LABELS TO HAVE AN EXTENDED ANCHOR LINE THAT DOES NOT STRIKE THROUGH THE TEXT WHEN THERE IS NO TEXT MASK?

Yes, anchor the middle left of text component to the 'feature' and then anchor the start point of the line to the middle right of the text component
