I would like to know if I create a large drawing set, and use ssm to rename tabs then remove the sheets from ssm, will there be any issues with my sheets or .dwg files? I am at a new company and my new boss is very old school, so I want to be proficient then revert it to the way that he would be good with once I rename all of my tabs.

SSM is just a cataloger of your layouts, what you do in SSM has no bearing on the physical Layouts in your DWG files.

There is really a reason you couldn't do that. As long as there are no fields in your plans that reference sheet set data that would be lost after removing the sheet set.

Depending on your settings, drawings won't lose the SSM information even after removing them from the Sheet Set.
