I would like to remove "missing" plot styles from the pen assignments but not sure how to go about it... any help?

i suggest to assign another new one and complete successfully plotting procedure. so the old missing one will gone.

if your problem is as what look like in below image and you want to get rid of this missing ctb file.all what you have to do is make another successful plot procedure with the new ctb file .
Note:
please check if there is any page setup already exist that must modified.

You could also delete the file from your main system settings. The problem with that is that it will be gone. You could just move it out of the folder and then it will not show up.
To delete the file go to:
C: -> Users -> (your name) -> AppData -> Roaming -> Autodesk -> (your software version) -> enu -> Plotters
Delete or move the file. That should also work for you.
After assigning a new plot style don't forget to hit the Apply To Layout button to set that as the new plot style and keep it from looking for the missing style.
If *Missing* is showing up under the Plot Style Table (pen assignments) top-right of the Page Setup/Plot dialog box, it's because AutoCAD cannot find that CTB file in the pathed folder, as configured in Options --> Files (as shown in the image below).
If you place the CTB file that is missing, in your case ARC-PLAN-SHOP A0.ctb in the same folder that is pathed (as shown above), the MISSING will be gone, as the CTB file is not stored in the Plot Style Table Support Path.
If you do not have that CTB file, or no longer need it, as others suggested in this thread, select the new/required CTB and Apply to Layout, or Plot to save and retain the new plot configuration.
