Mtext is Always white in model space - AutoCAD 2019

When I change the text color, it does not actually change the color of the text. The text remains white with a very small outline (red in the image).

I have changed it in the properties palette, in the ribbon and in the mtexttoolbar.

The only result I get is that there is a outline around the text that is the correct color, but the text itself is still white. That being said, when I open the editor, it shows the correct color, then once I finish editing it goes back to white with an outline.

Why is this happening!? I have spent a solid hour and half trying to find a solution to this problem, but I cannot find anything.

Also, this is NOT mtext specific, I have tried it on dtext as well, the same thing happens.

Would you attach a sample drawing with just your problematic text in it?  Was the drawing originally created in AutoCAD?  Does new mtext you create have the same problem?  Have you installed all updates for your version of AutoCAD?

Try this:  right click on your sheet layout tab and select "Page Setup Manager", then select the current page setup and select "modify".  This will bring up the Page Setup window.  In the upper right hand corner of the window under Plot style table uncheck the toggle "Display plot styles".  Select "ok" to exit out of the page setup window which will bring you back to the page setup manager.  In the page setup manager select "set current", then select "close" and see if that brings your text back to color.
