You can't re-associate a hatch to an existing boundary.
The setting "Assicative" for hatches needs to be activated before you create a hatch. Then the creation of the hatch will store the information about i's borders to the hatch object and so every modification of any of the borders initiate an update of the hatch.
Whenever you already have created hatches without the information about the borders you can't tell the hatch afterwards to find it's borders (they even might not exist any more) ... and that's why you can't activate the associative flag after the hatch is already created.
If that helps: you can create boundaries for a hatch (which are not the original objects, but new created objects) and for that function you can tell AutoCAD to regenerate the hatch to be associative to these new objects.
