defining table lineweights

In preparation to making the change from color to named plot styles (ctb to stb), tables are one area that introduces some doubt. Given the elements of tables do not have individual property dialogs, it seems the only way of defining lineweights for the borders and text is with color, rather than the other two methods: stb style or layer defined lineweights. It seems possible to draw the borders manually, and even create some of the header text separately, but are there other ways of redefining the plot styles of table elements?
Does anyone stick to ctb plot styles for this reason, and could there be other areas that color plot styles are advantageous?
