Datalink Table formatting incorrectly when inserting

I have a standard table that summarizes some key project information that I have used repeatedly.
For each project, I save a copy of the Excel sheet and link that to the project DWG to insert into the layout. Usually this works out great, but this particular DWG is having issues. When the table is inserted, the cells are massive and the text is tiny. When I try and resize the table using the blue arrow it will not allow the columns to get any narrower. In fact, the text gets reduced to 1 character width, with a ton of room on either side before the cell wall.
I tried changing the data link settings to Uncheck "Use Excel Formatting", and the issue remains. Also tried "start with Excel formatting do not update" and "Keep table updated to Excel formatting". In the images below you can see what the table looks like when inserted and what happens when trying to resize.
I also opened up the Table Styles settings and could not find anything to make the needed change. Previously, I would just scale the text font size in Excel and then use the blue arrow in autocad to resize the table to fit the layout block. I can scale the text size still, but it just seems to change the margin autocad has between the text and the cell wall, but I am unable to remove that text offset from the cell walls.
Help is much appreciated.
