In the Geolocation Tab setting the Online Map to Road Map I'm trying to get the same level of detail for a Capture Area as I did previously. When I zoom into the area I want to capture it isn't as granular as it was a few months ago. Has there been a change or is there a setting I'm missing?

I'm not sure I understand the problem you are facing. When you do a capture it looks like its basically taking a screenshot of the map and leaving it in place.
It looks like it does this at whatever zoom level you are currently at in the map. If you are needing more details you have to zoom in on the map.
The only problem I can see with this is that if you need the finer details like the smaller roads or tributaries, you have to zoom in pretty close.
The up shot is that if you use capture area as opposed to capture viewport you only get a small area with fine details. If you need a large area with fine details i would create a named viewport with the desired area, and then zoom into the map to the detail level you need and then use the capture viewport option.

I've found that if I do a screen capture then run GEOMAPIMAGEUPDATE I get a better resolution on the same capture I just did. Why I have to do this is beyond me, but it works on some of the screen captures.

What it sounds/looks like is happening is that you are changing the Resolution of the Geomap Image.
See my attached video. When I create the image, the Resolution defaults to "Optimal" and the text appears all at a predetermined size, no matter my view. Then, when I change the Resolution to "Fine" we can see all of the text change to a new (smaller) size, even at my same zoom level. I then run the GEOMAPIMAGEUPDATE command with the "Reload Only" option, which does NOT change my Resolution, it merely reloads the image data. However, when I run the same command and select the "Optimize & Reload" option, the image then reverts BACK to the Optimal resolution, and we can see the text size change back to its original (larger) size (the 'Optimal' resolution size).
I hope this helps clear things up and identify your issue of seeing different text sizes.
