I just purchased AutoCAD 2020 for Mac. I see that AutoCAD architecture is not available to me. Are there wall and window tool sets for 3D modelling? What is the difference between these tools and the ones available with architecture for windows? How do I get these tools?

you will need to check your Autodesk account here: manage.autodesk.com

none of the toolsets will work on a Mac you will need to run windows

if available on your account all the toolsets only work on Windows

No, plain AutoCAD is a general use CAD software package not geared towards any industry.

If you need the industry specific AutoCAD ARCHiTECTURE (aka "toolset" even though it is a completely standalone software) you need to add Windows to that MAC first, there are many ways to do that, you can Google Search options anytime and pick one that works best for your needs.
