I'm not sure why this is not a standard AutoCad variable (or if it is - please tell me; I could not find in help files);

As of the 2021 version, there is a textlayer option. If you choose the layer you want before you do it, it will ask to enter new value or use current. Use current will be the layer that it is currently on. Hope that helps.
