Strangely when I double click on one dimension in particular to highlight it and bring up the text editor my ability to change to text size seems only to work occasionally and despite testing the process many time I cannot determine what is affecting this? I've attached a screen shot if this help? Can anyone shed light on what I'm not doing properly please as I need this to be a reliable and quick process that works first time every time.

Post your DWG file with the problem and point to the dim in question.

Thanks for the file.

I have no issue changing your dim text: by chance are you not noticing you need to select, again, the dimension text inside to replace or edit it? This is now MTEXT works too, there is an extra step to take to edit or replace text already in place. Or are you trying to do something else perhaps?

Q: is your school instructor not able to help with your many basic AutoCAD questions? I see you are using the EDU software.

Hi Luke,

Dimension text is not the same as mtext or single line text created with MTEXT or DTEXT commands. It is a kind of FIELD, which shows measured dimension. I think that is the case of problems when you are trying to select dimension text.
If you just need to change dimension text size, you don't need to edit it like text object, but you can use Properties palette: select dimension and look at its properties -> Text section -> Text height
