When I click on any of the Layout tabs having worked in the Model space to create an object the paper space still looks the same and does not change to black/coloured lines on a white background as seems to be the case with all the tutorials I have watched. I also need a plotter driver for auto cad Mac 2019 version on a MacBook Pro Mac OS Catalina 10.15.5. thanks

This could be because of some custom settings on your side which are different from those shown in the tutorials. Can you provide screenshot of what you see on your side and screenshot from one of the tutorials?

Special plotter driver for AutoCAD for Mac doesn't exist. When you plot from AutoCAD for Mac to physical device, AutoCAD uses one of printer / plotter driver installed in macOS System Preferences. So if you have physical device (printer or plotter) you ned to install software for it on macOS system level, not for AutoCAD. If you need to create file in PDF format, you can use one "AutoCAD PDF.pc3" printers which are available by default in AutoCAD for Mac.
