The Icon Menu button on the Schematic tab of the ribbon will load the Icon menu for schematic symbols, based upon the menu you have defined in Project Properties. The symbols for the Hydraulic, Pneumatic, and P&ID symbols are available in menus you select by clicking on the arrow next to the panel labeled Insert Components, on the Schematic tab of the ribbon.
To return to the electrical components Icon Menu, click the button labeled Icon Menu. Again, the actual menu that will load is based upon the settings in Project Properties. The library folder where the symbol blocks come from is also defined in Project Properties (Schematic Libraries), right above where you define the icon menu (Schematic Icon Menu File). Usually the list consists of the NFPA and NFPA/1- as the top two, for the schematic symbols for the U.S. market. After the schematic symbol libraries are defined you can then add the pneumatic, P&ID, and hydraulic folders. These are usually default assignments you get when you click on the Schematic category of Project Properties and then click the button labeled Default at the right-hand side of the Project Properties dialog. If you click on the category labeled Schematic Icon Menu File and click Default, you get the default Icon Menu. The defaults are set in the wd.env file, located inside of the AeData folder, under the My Documents\Acade 2018 folder path. The defaults are created according to which library you selected as your main library when you installed the software. Be careful with editing the wd.env file until you have had some training. There are options and path statements in that file that can yield adverse affects if you aren't careful.
