This may sound strange but I cannot find an "undo" in the program. Has anyone else run into this? is there a work around?

Do you mean you can't find undo while you are in the middle of laying out a pipe network? Undo is that arrow on the end of the pipe layout dialog.
Other than that, you can go to AutoCAD's Undo list and you'll see your commands there. Scroll down to the point to which you want to undo and pick.

There is an option to start tracking changes and I guess you can go back to before the tracking (haven't used it) but IMO it's a poor excuse to not have incorporated undo/redo.

You misunderstood the intention of my post. Of course we can't run the software without making input errors. That's why the wink at the end of the sentence. That is meant to denote humor or lightheartedness. I was not my intention to be mocking, disparaging, derogatory, insulting, or dismissive.

I don't think there is any way to undo something which is really frustrating. My work around has been close the file without saving and do all my unsaved work over again without making any mistakes or trying anything I might want to undo.
Added Bonus: Closing without saving tends to send SSA into a death spiral for me.
Has there been a solution for this problem? I am having the same issue.
