Assign Z value to text

Hi guys, I'm trying to assign the associated z values to the text in order to make a surface tin, as the survey I have is only in 2d format.

I've done this before so know it's possible - however it's been a fair while and my notes are rather insufficient.... An idiots guide would be much appreciated!
