If i have an ARCH. 100 mm wall, consists of 20 mm cement, 60 mm gypse and 20mm paint identified in the wall structure. is it possible to filter for example, the walls that has Gypse as a component in Assemble ? if yes, how do i filter it ?

To answer your question, it's possible but not guaranteed. As Assemble does not provide a material takeoff, it would be necessary for a property, whether Revit native or custom Assemble, to indicate walls containing Gypse.
In regard to how to filter, or obtain a quantity, for objects containing Gypse, I'll provide two examples, using Revit parameters or Assemble properties.
1. Model based parameter:
Within the Revit model, the wall object may contain the value "Gypse" for its Structural Material parameter, or "Gypse" for the Type Mark parameter, or even a custom Revit parameter that identifies "Gypse" in relation to specific wall types.
Using an example of a "Metal Panel on Metal Stud" wall, this wall has a model property called Structural Material, with a value of "Air Barrier - Air Infiltration Barrier". I would use Assemble's Visibility Settings and create a rule to show only objects with a Structural Material property equaling "Air Barrier - Air Infiltration Barrier" (but would not be able to collect a quantity of this specific material).
2. Assemble custom property:
Within Assemble, you could create a custom property, such as "Gypse Material in Walls" with a data type of Volume, but you would need an individual to manually enter this volume, which can then be rolled up to provide a quantity for Gypse, and could be used in a filter to hide all objects without a blank value for this custom property.
