Restrict Thin Film

How do I restrict the effect of thin film to a particular area, rather than everywhere? I.e. in this case just to the bottom of the pan?

You could use a ramp -> mix_shader.mix_weight or layer shader with the pan shader in one slot and the pan shader with thin film in the other.

Or, if I understand you correctly and the geometry is up for it, you could maybe use a vertex map to identify the area where you want the "coated" look. Vertex maps are often super useful when you want to apply different shaders to different areas of a geometry.
