The symmetric modeling tool uses construction history to "repeat" whatever CV transformation you do on one side to the other. So to stop symmetric modeling, all you need to do is delete construction history.
In the command menu bar, go to Delete > Delete Construction History.
You can always use Symmetric modeling again after that. Another cool thing about Symmetric modelling is that you can move/rotate/scale your whole surface and it will still maintain the internal symmetry while being off of the world XZ plane.
