Not sure about your goal: is it to flat the surface or to split it in several single span surfaces?
Maybe, you could use Detach snapping to any span.
In this way you will get several surfaces as using Skin, but Skin tool creates a ruled surface (degree 1 in V direction), while detach keeps the original degree of the multispan surface. So, the results could be different.
