I'm following a 3DS Max tutorial online course when I encounter the part where they are stacking modifiers like multiple edit poly but when I do it all other modifiers disappear like I have shell modifier previously but when I added another edit poly modifier it disappear and have applied on my mesh.

I've never seen this one before. You could try three things just to see, 1) rebuild the object because maybe it has a flaw, error or some corruption that's leading to a malfunction, 2) open a new file and build a simple object like the one you have, put a 'shell' on it and then an 'edit poly' and see if it malfunctions there too. If not, then something in that original file is corrupt. If it happens in a new file then, 3) I'd try an ENU reset of Max. You can search here to see how to do that.

It's all good, I did create another object and it works well I don't know what I did at the first try probably I just modified some settings then applied it accidentally.
