Your machine assembly will have the information of what revision/release its subcomponents were at when it got released itself.
If you perform a "Get" operation in Vault, just be careful to expand the options (bottom left side, click the double >> <<) and select the desired release/revision for the main assembly, and not the "Latest" option:

We design and build custom machinery and also several lines of more stock machines. We have a debate in house about how to keep track of the state of a machine when it shipped. Normally when we opened a previous machine model, anything that had been changed would be flagged that it's not the current version and it needs updating. Is there any way to lock an assembly's state and not allow it to be updated unless something was specifically needed to be changed on it? For example, an assembly on a machine had several parts with no revisions. After the machine shipped the parts get revised and some changes made to the assembly so everything has revisions, but the parts in the field are not the revised versions. When the customer contacts our service group, the model they reference wants to update to the current versions of everything but then what service references will not match what the customer has. But if a revised part gets sent to a customer we'd like to be able to make that change so we keep the model the same as the customer's actual machine.

Any way to lock something like that?

You might try the Label function in Vault.
