Only copy/Monitor the Architectural levels needed for Structural Coordination. Architects may put additional levels in for there uses that are not needed by other disciplines. Likewise, Structurally you may add additional levels for your internal coordination. Once the needed Architectural Levels are Copy/Monitored, there is no need to place another level in the same place.

Good morning, I'm new to revit. Our company is transitioning to Revit from Advance Steel.

If I have levels in the Architectural model, and I have them copy/monitored into the structural model. How does that work? Do I need to also have matching levels in the structural model? Or can I only have grids and levels from the Architectural model and used them for the structural model?

You can copy monitor levels and grids from the Architectural file into your structural file to the same place or with an offset and you can add prefix or suffix to the name (in your model)

Once you have copied the levels and grids in, if you unlink the architects file then the monitoring part wont work but the copied levels will remain
