Why are structural floors a part of the architectural floor family, when structural families are typically separate? If I want to model a structural slab floor, do I have to use the architectural floor family or can do I just have to model it as a structural foundation?

You can use either. But keep in mind you can modify sub-elements of a Floor, but not a Structural Slab Foundation.

You might use wherever button you want.

The difference is that the "structural" one comes with the analytical model turned on for your floor.

I understand you, but in this case it is what it is.

Have you seen stairs? It doesn't make a proper joint to walls! 😕
