It's a challenge, but not impossible to do. I would suggest a KISS approach - Keep it Simple Simon. Model several overlapping Roofs and then Join them all together. Try Roof by Extrusions in front, back and side elevations.

I agree with @barthbradley to keep it simple but consider the following:

Model the space the battens holding the thatch separately from the thatch itself and as a roof category. This will simplify the attachment of walls to the underside as it is typically composed of simpler planes than the outside of the the thatch. You will also be able to use the top side of the batten/roof to snap to when modelling the underside of the thatch;
If work is to be done to modify the geometry of the existing shape of the roof, try to plan the modelling to have parts that can stretch/extrude near the limits of the work.
