This grey color is a system default color (grey 127 127 127). Revit uses it for the objects that do not have material/color defined by the user - <by category> objects.

To change it, open object style window and apply material and shading color of your choice.

Your explanation makes sense and is exactly the sort of thing that I thought was going on, but when I go to the object styles window and set the shading to a specific color, it doesn't change the core color. I turned the wall wrapping off for this exercise. I have struggled with a similar behavior with floor cores. Still, your screenshot shows different behavior than what I'm getting. What might I be doing wrong to NOT get the core to change when I assign a wall object style a specific color? Any help is appreciated. Would love to be able to work as simply as possible with these schematic designs until further complexity was warranted.

Make a change in material browser, not object styles. Wall layers in your case have default wall material applied to them. You need to make a change to default wall material.

Also, change the shading to shading with consistent colors. You might be getting different color shading depending on lighting. It could be confusing especially with gray color that might look like white.

Hope it helps.
