Dashes on Callout Tag

I created simple callout with just few clicks:

... as it can be seen, the callout tag contains dashes in both halves of bubble. I was not able to find any simple reference which explain what these placeholders should refer to, neither I was able to edit it, as left clicking just leads to callout view, while right clicking does not have any option related to this.

The value will fill after you place the call-out view on a sheet.

I am catching to this: is there a way to modify existing callout head?

When I try to change callout tag properties, I have option of only one callout head, and load button is shaded.

I see not option to modify that callout head. Is that done on separate file level? I mean, I have to open callout head file somewhere else, and moreover, if I want to load some other head, I firstly need to create it (though it's somewhat strange that Revit knows in advance that there is nothing to load, so load button is dissabled)?
