I am using consistent colors and the generic models are gray. I cannot change the color or apply a material. I tried the paint bucket tool and also the materials and finishes in the properties but it is still gray?

Is it possible to change this?

Try selecting the Generic Model(s) and right clicking and selecting override graphics in view. Then change the surface pattern to the color you want. Consistent colors view doesn't allow for the best representation of materials / colors. This option should help though.

That won't do anything in "Consistent Colors" views. He has to override the visibility graphics, right?

Consistent color visual style has nothing to do with materials not showing.

Possibly check your object styles material overrides for the view...

I got it to work by right clicking the generic model going to edit family and applying the material there

Ok, so either the material parameter was incorrectly associated to the geometry or you had painted surfaces applied in the family itself to begin with. I think that should summarize it...:)
