Maya crashes & Sets

Hey,

I have huge trouble with Maya at the moment and I need to fix this problem real fast.

1.) Maya crashes every few minutes since I started using the UV Editor on a specific object without an Error Report and I don't know why. (I Haven't changed alot from the standard settings.)

2.) What are Sets? I can't find an proper explanation what Sets are and what their use is. Referring to the Crashing Problem I also have a 140+ Sets and I don't know why or what to do with them, so I think the number of sets might cause the crashing..? But I don't know how to minimize them or if it's a good idea to delete them, because it looks like deleting those sets could delet actual pieces of my model.

I'm happy if someone could tell me what I'm doing wrong or what I could do to stop Maya from crashing!
