Regarding Sheets: I want the background to be white. How is this accomplished?

See if the options in the color scheme editor do what you need.

If you want to permanently change the colour, you'll need to change it in your drawing template:

Create a new drawing
Tools > Document Settings > Sheet
Set the sheet background colour to white
Close Document Settings
File > Save Copy As Template
Overwrite the existing Drawing template (or save it as something new if you want both options).
