I would like to cut out the roundings where there are "X" signs, but leave them in the place where the "correct" sign is, what option should I use, because I'm looking for it but I can't find it

The way you're modelling is a mess...
Try this technique in the video: using Unfold Refold will prevent all those issues you're finding by cutting.

After you create all the cuttings you need, refold the part... and then you will have the flat pattern you need.
