I'm clearly doing something very wrong. I've watched a bunch of tutorials, I've googled, I've searched here. I just want to be able to click on things in sketch and have them be then "selected" and be able to edit them. I'm trying to create a VERY simple mockup of a rectangular building that I can then design a room inside of, but everything I try ends in frustration. Even deleting a single sketched line is nearly impossible. I cannot get any lines to be "selected" unless I first engage one of the "modify" tools, but even then I can't move a small square without affecting the rest of the sketch. I've looked for how to remove the constraints, but the videos I found just say to click on the constraint icon and delete it. I can't select that either.

If there's an obvious tutorial for doing this kind of basic mock up that I'm missing, please point me in the right direction. I've previously used SketchUp for this stuff, but it doesn't seem to work anymore.

Please demonstrate the problems in a screencast and upload the file.

Then we could deal with it in a more specific way.

Can you File>Export your *.f3d files that you created while following the Tutorials to your local drive and then Attach it here to a Reply?

Can you provide the reference links to the Tutorials?

if you are having trouble selecting curves in sketches, the most likely explanation is that you have more than one sketch, and the item you are trying to select is in a different sketch than you are editing. Look at the browser to see how many sketches you have, and toggle visibility to see what curves belong to what sketch. When sketching, be aware of which sketch you are editing, and don't use the "new sketch" icon unless you really want a different sketch to be created. But, that is all speculation without more information (design, screencast, maybe even a screen shot)

So, I have no idea what was going on (it's possible that it was as outlined above with multiple sketches) but when I reopened the program, having not changed anything else, it was just... working. I can click on, select, and manipulate elements of the sketch as expected.

Agree 100%... Not intuitive at all.
We started using it at work, but its the most frustrating piece of software I've ever worked with.
I've been using 3D Studio for over 25 years, and it's a joy to work with. Fusion 360 is NOT

3DStudio is a completely different tool for different uses case.

Just the fact that you are comparing the two indicates that some basic instruction might be useful.
