SKETCH/Polygon/Edge Polygon Help

Ok, in light of where I am and what I am wanting to do and a clip I have seen, I am stuck.

At the start there are a lot of hexagons and pentagons lying around.

This stumps me:

It would seem that I need to draw these "Edge Polygons".

The initial Polygon option you set the radius rather than the side length, and that has become obvious that this is somethings needed.

But I am stuck with the steps needed to create them.

(Maybe it would be better if I could capture the screen as I am doing it - and making a fool of myself - but it would really help in showing what it is I am missing)

(If that could be explained I can post the video of that and maybe save a lot of time.)
