Hello! For some reason, I can't click on a body and move it around the joint I've set. I am trying to model a trigger assembly, and I've got some motion links set up, but I can't test any of the motions as they move each other. I've tried both the shortcut AND selecting the Component Drag option. Nothing seems to work. All it lets me do is move everything within the plane it's on.

Basically, I'm trying to move one component, and see how it interacts with the other components, especially with the Contact Sets on.

This is kinda what I want to happen, as far as being able to manually rotate a component around it's set joint, and have the other components move with it: https://www.youtube.com/watch?v=jSaLy4RMnfY&feature=youtu.be

You have 3 contact sets enabled in this design, and that seems to be blocking drag. Disable those contact sets, and drag works. In general, contact sets are really limited in what they can do, and creating large contact sets will, at best, perform badly, and at worst, as in this case, completely freeze your design. Though I did not dig into this in any detail, my offhand guess is that these contact sets involve components that are already in contact, which easily could block all movement. Instead, I'd recommend setting joint limits.

Makes sense, but I'm wanting to be able to move one part around it's set rotation joint, and have it interact with the other parts accordingly, not just drag the entire assembly around like in your video.

contact sets are just not going to work. You'll have to first ground at least one component, and then define a set of joints that define your motion, joint limits to stop motion at the right point, and Motion Links between multiple joints for more complex motion. Even then, some complex motions might be hard to model. In that case, you'll have to try Motion Study for more complex motions.
